Grilled Tomatillo & Goat Cheese

Ingredients

  • 4 Green Tomatoes
  • 150g Creamy goat chesse
  • 1 Lemon
  • 2 tsp Cooking oil
  • Extra Virgin Olive oil to taste
  • A few fresh Oregano leaves
  • 10 Fresh Raspberries
  • XO Sauce™
  • Salt to taste
  • Pepper to taste

Method

  • Whip the creamy goat cheese with some freshly ground pepper, salt, and a splash of lemon juice to make the cheese softer and to brighten the taste.
  • Slice the green tomatoes into thick rounds and brush a thin coat of oil to both sides of the slices. Grill the tomato slices at a high heat on the barbecue until charred on both sides. 
  • Grab a deep big plate of your liking and spread the creamy goat cheese on the bottom of the plate to create a bed for your grilled tomatoes. Layer the grilled green tomato slices on top. Dress with dots of XO Sauce™, olive oil, salt and pepper, and garnish with raspberries and fresh oregano.
